Five tempting sweet recipes to make your Navratri fasting tasteful

1. Milk Cake : Set aside a 6-inch plate that has been greased with oil or ghee.

  • Allow milk to boil in a large, wide, and heavy saucepan over medium high heat. Boil it for around 2-3 minutes. Add a few lemon drops to the milk, it will start to curdle. 
  • Boil for 5 minutes, then strain out about 1 to 1/2 cup of the whey (milky water) . This will assist to lessen the tartness of the cake.
  • Cook, stirring occasionally, until the milk has thickened and the whey has evaporated. This will take another 15-20 minutes.
  • Stir in the sugar and cardamom until the mixture begins to come together. 
  • This should take about 5 minutes. Reduce the heat to medium and continue to simmer for another 4-5 minutes, or until the mixture turns a slightly golden brown in color.
  • Transfer the mixture on the plate and press firmly into a 1 inch high square shape. Optionally, top with sliced pistachios.
  • Allow it rest for at least an hour before slicing into individual servings.

2. Kalakand : Grate or finely crush 250-300 g paneer to make approximately tightly packed cups.

  • In a thick-bottomed pan or kadhai, combine 1 tin/can (400 g) sweetened condensed milk.
  • Stir in the grated or crumbled paneer and condensed milk.
  • Combine thoroughly.
  • Season with sugar to taste.
  • Simmer this mixture over low heat, stirring occasionally.
  • In the meantime, grease a pan or tray with ghee or oil. Line it with parchment paper if desired.
  • Stir the mixture frequently to prevent it from sticking to the bottom of the pan.
  • As the kalakand mixture simmers and begins to cook, it will thicken.

3. Sweet potato Halwa : Boil  Sweet potatoes

  • Heat a pan and add ghee

  • Add sugar if it’s required
  • Cook the halwa
  • Now serve & garnish with dry fruits.

4. Kheer Badam Halwa : To get started, soak a large pinch of saffron in 1/4 cup milk. You are allowed to use skim or full fat milk;

  • You can use either cold or hot milk. Saffron will release its color faster if you use warm milk. 
  • Set this aside for now. As the saffron releases its color and flavor, the milk will turn golden and aromatic.
  • Heat a thick-bottomed, deep pan over low heat. Use a deep, thick-bottomed pan to prevent the badam halwa mixture from burning and sputtering.
  • Then add 2 tablespoons of ghee and melt it.
  • Once melted, stir in 1.25 cups (125 grams) almond flour. Combine it thoroughly with the ghee.
  • When it begins to thicken, add 1 tablespoon of ghee and continue to whisk. After around 8 minutes, the mixture will begin to form a mass. Add 1 tablespoon extra ghee at this point. The mixture will begin to leave the pan after about 3-4 minutes. This indicates that it is cooked and of the proper consistency. Overcooking will result in chewy halwa. Another method is to take a small amount of halwa in a spoon and let it cool slightly. If you can roll it into a ball without it clinging to your fingers, it’s done. If the halwa is still sticky, heat it a little longer. 

5. Malai Peda : Mix the ricotta cheese in a heavy bottomed pan.

  • Cook for another 5 to 7 minutes.
  • Mix in the milk powder thoroughly.
  • Mix together the sweetened condensed milk and saffron threads.
  • Cook until the mixture thickens slightly.
  • Mix in the cardamom powder thoroughly.
  • Separate the mixture into two dishes.
  • When the mixture is cold enough to touch, divide it into little lemon-sized balls.
  • And pedha, form that in too small a size.
  • Almonds for garnish!
  • This recipe yields approximately 25 nice-sized pedhas!
